What is PATRA??
>> Patra is a vegetarian dish. It is made from Colocasia Leaves stuffed with rice flour and flavouring such as spices,tamarind,and jaggery.
You can make it as per your taste. Food for breakfast, lunch, dinner, snack, brunch or anytime.

Ingredients:-

  1. Patra leaves                     10-12 leaves
  2. Jaggery                            1/2 cup
  3. Tumeric Powder              1 tbsp
  4. Dhana Jeeru Powder        1 tbsp
  5. Red Chilli Powder           2 tbsp
  6. Salt                                   As Per Taste
  7. Raw Mango Powder        2 tbsp
  8. Besan flour                      2 cup

For Besan Batter :-
Add all the ingredients in a mixing bowl except Patra Leaves with water. Use water accordingly that the Besan mixture is not very thick and running. Keep aside for further use.

Prepare Patra Leaves :-
Wash Patra Leaves and wipe it on both sides.
Keep the Patra Leaves facing the veins and remove all the thick and small veins.

Main Recipe :-
-Place the leaf and spread the Besan mixture on vein side and spread thoroughly.
-Take the second leaf and spread again the besan mixture on it.
-Repeat the step for other leaves as well.
-Now fold from 3 sides and Apply mix as well. Fold it in a tight roll.
-We can use 3-4 leaf for 1 roll out of 12 leaves we can make 3 rolls.
-Steam the Patra rolls in the steamer for 15 minutes.
-Check with knife if it comes clear its done or else cook for 5 minutes more.
-After cooking the Patra cut them into slices.
-Take a Pan on medium flame add 2 tbsp Oil for tempering.
-Add 1 tbsp mustard seeds & let it crackle.
-Sesame seeds and 1 tsp Hing.
-Add the sliced patra and mix(cook for 1-2 min).
-Garnish with coriander and grated coconut.

Now it's ready to serve with green/red chutney.
