Khandvi- the bandage

Thanks alot for commenting on previous blog. Let us see our final recipe for these month. Hope you all will love it tooo.

Khandvi is readily available across India and is commonly eaten as an appetizer or snack. Many people choose to buy it from local shops rather than preparing it at home. It is sometimes served with green chutney. 

Let see the ingredients to prepare bandage khandvi: 
Warm buttermilk      2cups
(Heat the buttermilk for 2 minutes
curd and water should be same ratio )
Besan                           1 cup
(Chickpea flour seive it so there are no lumps)
Turmeric                     1tsp
Salt                                as per your taste
Hing                              1/2 tsp

Tempering
Oil           1tbsp
Til             2tsp
Green chilli paste    2tsp
Coriander                  for ganishing
Rai(mustard seeds)   2tsp

Recipe to prepare khandvi: ๐Ÿ˜‹

  • Mix from butter milk and besan in the mixing bowl. 
  • At turmeric powder and salt
  • Add hing half tablespoon and mix it well. 
  • Put the prepared paste in the pressure cooker and pressure cooker for 2 whistle on medium flame. 
  • Remove the vessel from pressure cooker and mix and starts spreading it immediately on a greased plates. 
  •  cut it in 1-2 inch size, start rolling it and repeat the same procedure for the rest and keep them aside. 
  • Take 1 tbsp oil in pan for tempering rai (mustard seeds)-2 TSP
  • Til (sesame seeds ) 2 tsp ,hing - a pinch. 
  • Add the tempering to khandvi. 
Garnish with coriander and it's ready to serve.

Thank you for ur support by commenting and showing interest in my Blogs.  So here I come with one more Dhamakedar Recipe on handvo.

It is a spicy cake for people. It is gujarati people's special recipe. It is often made with a bottle gourd filling, though many other vegetables can be added. 

Ingredients to make dhamakedar Handvo: ๐Ÿ˜ป
(For handvo batter)
Chana dal                     1 cup
(Soak in water for 4 hours and grind to smooth paste)
Green peas(grinted)   1/2cup
Dudhi(grated)              1cup
Cabbage(grated)         1/2cup
Turmeric                      1 tsp
Salt                                 as per taste
Red chilli powder       1tbsp
Dhaniya jeera powder 1tbsp
Sugar                             2tsp
(Option can put as per your preference)
Eno(fruit salt)               1tsp

 let's start the recipe: ๐Ÿ˜‹๐Ÿ˜‹

  • In mixing bowl add all the ingredients for handvo batter. 
  • Add eno (fruit salt) mix the batter well. 
  • Pour the handvo batter in any greased cupcake liner. 
  • For tempering: 

Oil                            1 tbsp
Mustard seeds       1 tsp
Sesame seeds         1 tbsp
Curry leaves           7-8
Cilantro                    1 tbsp

  • Pour tempering mixture on handvo batter. 
  • Steam the handvo in cupcake liners ,check in between if done. 
  • Serve with green chutney ,coconut chutney ,chunda etc. 
  • Handvo can also be baked in oven also made in Pen but this is the healthy version of handvo.

Today I have come with a receipe which is loved by one and all that is tera๐Ÿ‘‰ mera๐Ÿ‘ˆ sabka dhokla.

Yearning for something delicious and easy to digest, then this Gujarati delicacy is the thing to go for! Khaman Dhokla is a Gujarati recipe prepared with besan, baking soda and curry leaves. This vegetarian snack recipe is an ideal dish for occasions like kitty parties, potlucks and picnics. Khaman Dhokla is quite common in almost all Gujarati households and is usually enjoyed as a breakfast and light snack. Though you can also have this scrumptious Dhokla recipe as a snack by pairing it with tea or coffee. Khaman Dhokla is soft and juicy and is sure to be loved by people of all age groups. This traditional Gujarati delight is served with slightly pan fried green chillies. The tempering is made using curry leaves and mustard seeds which add a piquant aroma and flavour to this dish. 

While making this Dhokla recipe, just make sure that you put the baking soda in just the right quantity as it will decide the fluffiness of the Dhokla. Unlike other fried snacks, Khaman Dhokla is a steamed recipe which is sure to keep your calories in check without compromising on the taste. This vegetarian recipe makes for a perfect healthy snack option, which you can prepare at home using easily available ingredients. You can add your own twist by slicing the dhokla and adding green or red chutney to the layers put it together and garnish it with some dried coconut and serve it with pan fried green chilies.   • 1 cup gram flour (besan)
  • 2 1/2 cup water
  • 1 teaspoon sugar
  • 1 3/4 teaspoon lemon juice
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 tablespoon refined oil
  • 15 curry leaves
  • 4 sliced green chilli
  • 1 teaspoon mustard seeds
  • 1 handful chopped coriander leaves
  • 1 teaspoon powdered coconut

Let's start with taste receive๐Ÿ˜‹๐Ÿ˜‹: 

STEP 1

To make this delicious Khaman Dhokla recipe, take a glass bowl and add gram flour, water, lemon juice and baking soda in it. Mix well all these ingredients. Allow the batter to ferment for 1-2 hours. In the meantime, pour boiled water in a steamer and grease the utensil with oil.

STEP 2

Pour the dhokla batter in the utensil and cook on low flame for 15-20 minutes. Check with knife after 15 minutes by inserting it inside the dhokla. If the knife comes out clean, remove it from the stove. Allow the dish to cool and then cut into pieces.

STEP 3

For the tempering, heat another pan with oil in it over moderate flame. Once the oil is sufficiently hot, add mustard seeds, curry leaves and vertically sliced green chilli. Add 1/2 cup of water in the pan and allow it to boil. On 2-3 boils, squeeze 1/2 lemon, add sugar and green coriander leaves. If you are someone who likes it spicy you can add some finely chopped green chilies to the top coating. You can also make Dhokla sandwich by layer Dhokla and adding your favourite sauce to it.

STEP 4

Turn off the heat and pour the tempering on the dhokla. Transfer the dish to a serving bowl and serve it with green coriander chutney. Khaman Dhokla is best enjoyed when paired with Faafda and Jalebi.

What is PATRA??
>> Patra is a vegetarian dish. It is made from Colocasia Leaves stuffed with rice flour and flavouring such as spices,tamarind,and jaggery.
You can make it as per your taste. Food for breakfast, lunch, dinner, snack, brunch or anytime.

Ingredients:-

  1. Patra leaves                     10-12 leaves
  2. Jaggery                            1/2 cup
  3. Tumeric Powder              1 tbsp
  4. Dhana Jeeru Powder        1 tbsp
  5. Red Chilli Powder           2 tbsp
  6. Salt                                   As Per Taste
  7. Raw Mango Powder        2 tbsp
  8. Besan flour                      2 cup

For Besan Batter :-
Add all the ingredients in a mixing bowl except Patra Leaves with water. Use water accordingly that the Besan mixture is not very thick and running. Keep aside for further use.

Prepare Patra Leaves :-
Wash Patra Leaves and wipe it on both sides.
Keep the Patra Leaves facing the veins and remove all the thick and small veins.

Main Recipe :-
-Place the leaf and spread the Besan mixture on vein side and spread thoroughly.
-Take the second leaf and spread again the besan mixture on it.
-Repeat the step for other leaves as well.
-Now fold from 3 sides and Apply mix as well. Fold it in a tight roll.
-We can use 3-4 leaf for 1 roll out of 12 leaves we can make 3 rolls.
-Steam the Patra rolls in the steamer for 15 minutes.
-Check with knife if it comes clear its done or else cook for 5 minutes more.
-After cooking the Patra cut them into slices.
-Take a Pan on medium flame add 2 tbsp Oil for tempering.
-Add 1 tbsp mustard seeds & let it crackle.
-Sesame seeds and 1 tsp Hing.
-Add the sliced patra and mix(cook for 1-2 min).
-Garnish with coriander and grated coconut.

Now it's ready to serve with green/red chutney.

Hope you’ll enjoyed my last blog on the Mouth Watering Undhiyu. I am sure some of you’ll must have even tried making it. So here I come with One more Interesting yet Easy Recipe on DABELI which some of you’ll know it as DOUBLE ROTI. Before I give you the recipe of this yummy dish, let us know some General Knowledge(GK) on it.

So,
What is DABELI๐Ÿ˜“?
>> Dabeli or Double Roti is actually from Kutch. It is sometimes also called Kutchi Dabeli. It’s a popular snack food which when consumed explodes with various flavours, something sweet something spicy. You can say that you had FLAVOURS KA DHAMAKA๐Ÿ’ฅ in your mouth. It is a spicy snack made by mixing boiled potatoes with special Dabeli Masala and serving it with Chutneys made from Tamarind, date, garlic, Red chillies, etc.

I know, I know your mouth are watering already. So without wasting one more minute lets see how we are going to make this yummy dish.

What do you Require(Ingredient) to make Kutchi Dabeli:-
  1.     Potato (boiled)             4
  2.   Cabbage (chopped)     ½ Cup
  3.   Cucumber (chopped)   ½ Cup
  4.    Green Chutney
  5.   Tamarind Chutney
  6.   Tomatoes (chopped)    2 pieces
  7.   Coriander (chopped)   2 tbsp
  8.   Salt                              As per taste
  9.   Dabeli Masala              2 tbsp
  10.   Red Chilli Powder       2 tbsp
  11.     Dhania Jeera Powder  1 tbsp
  12.    Coconut (shredded)     2 tbsp
  13.   Nylon Sev                   1 bowl
  14.    Masala Peanuts            2 tbsp
  15.   Pomegranate                2 tbsp
  16.   Ginger Paste
  17.  Oil

How do we Prepare it:-
-Take boiled banana in bowl and smash it with smasher roughly.
-Heat the pan on medium flame. Add 2 tbsp Oil and 1 tsp Hing.
-Add Chopped Cabbage and Saute it for a minute.
-To this add Dabeli Masala and mix well.
-Add Red Chilli, Salt, Dhana Jeeru and Tamarind Chutney. Add Smashed Banana mixture to this and mix well. Cook this for 5-7 minutes till mixture becomes thick.
-Take the mixture in a bowl. Let this mixture come to room temperature. Keep this aside for later use.
-Take a pav and cut it into 2 halves. Spread Green Chutney, Tamarind Chutney on both sides. Place the stuffing we just prepared on 1 side of the Pav & sprinkle it with Chopped Tomatoes, Pomegranate, Cucumber, Coriander and Grated Coconut.
-Heat the pan on Low Flame. Add ghee and cook Dabeli for 3-4 mins till GOLDEN BROWN.

Here are Yummy Kutchi Dabeli is Ready to Serve Hot with some Masala Peanuts.

My Today's 1st Recipe is UNDHIYU. Undhiyu is a Gujarati Mix Vegetable Dish that is a regional specialty of Surat, India.

WHY IS IT SPECIAL??
>> It is a symbol of auspiciousness and prosperity because all veggies are present in the dish & it is believed that whoever eats Undhiyu on New Year will eat all veggies thro'out the year. Undhiyu is seen as a Complete Meal.
It is a good food for LUNCH, DINNER or ANYTIME. Its enjoyed by each and everyone. People Not having Vegetables starts Eating It ๐Ÿ˜

Let Us See How To Make This Mouth Watering Dish๐Ÿ˜‹.

What All You'll Require (Ingredients) For Undhiyu:-

  1. Small Flat Beans(Valor)  500gms
  2. Tendli                               50 gms
  3. Raw Banana (diced)         3
  4. Tomatoes (diced)              3
  5. Green Tuver Dana            1/4th Cup
  6. Oil                                     2tbps
  7. Flat Beans Seeds              2tbps
What All You'll Require (Ingredients) For Muthia Balls:-

  1. Green Methi (finely Chopped)   1 Cup
  2. Coriander                                    1/4th Cup
  3. Wheat Flour                                1 Cup
  4. Besan                                          1/2 Cup
  5. Sugar                                           2 tsp
  6. Lemon Juice                                2 tsp
  7. Salt                                              To Taste
  8. Green Chilli Paste                       1 tsp
  9. Hing                                            Pinch
  10. Turmeric Powder                         Pinch
  11. Oil                                               2 tsp
What All You'll Require (Ingredients) For Green Paste:-

  1. Coriander                                  1 Cup
  2. Fresh Grated Coconut               3 tbsp
  3. Green Chillies                           10-12
  4. Tomatoes                                   1/2
  5. Sugar                                         2 tsp
  6. Lemon Juice                              2 tsp
  7. Salt                                            To Taste
How To Prepare It ๐Ÿฒ:-
First Chop all the Veggies except Tomatoes and Raw Bananas.
Then our next step is to prepare the Muthias. It is done in the Following Way:
      Mix all Muthia ingredients and mix well without adding water to it. Prepare Small Balls out of           the mixture and Fry it in Hot Oil on Medium Flame. Fry until it gets GOLDEN BROWN.
     Your Muthia Ball is Ready Now. ๐Ÿ˜‰
Next Step In Making of Undhiyu is its Green Paste without which Undhiyu is not Undhiyu. This is made in the Following way:
      Put all the ingredients of green paste in a Mixture Grinder and Grind it until a smooth paste.
Boil the Chopped Veggies now And keep it aside for further use.
Add the Green Paste which we Prepared Earlier and Saute it for 5 minutes. Add All the Boiled Veggies in it and mix it with green paste. Add some Water to adjust consistency and cook for 5 minutes.
Don't forget the Muthias prepared. After adding it Cover & Cook if for 5-7 minutes.
Now we Are Done Making Our YUMMY UNDHIYU.
But Wait A Sec we forgot Something ๐Ÿ˜ฑ
Ahh We forgot to Garnish.๐Ÿ˜ƒ
Garnish our Master Piece with Coriander & Grated Coconut. Don't forget to Serve this Hot Undhiyu With Garam Garam Puris.
Here We are Done Making Our Mouth Watering Undhiyu.๐Ÿ˜€๐Ÿ˜
